With mangos in season, Pastry Chef Robin McCoy, whips up nectarous Mango Bars and serves them with sugar, spice and everything nice... literally! Ingredients
Filling
1 1/4 cups sugar
3 tbsp. all-purpose flour
4 large eggs
1 1/4 cups mango puree (2-3 mangos)
1/3 cup lemon juice
Crust
1 1/2 cups all-purpose flour
1/4 tsp. salt
1/4 cup sugar
1/2 cup cold butter cut into 8-10 pieces
Directions
Preheat oven to 350 F. Lightly grease a 9x13 inch backing pan for the crust.
In the bowl, combine flour, salt and sugar. Cut in butter until it is completely incorporated and the mixture is slightly sandy.
Transfer mixture into prepared pan and press firmly into an even layer. Bake for about 17 minutes - until set at the edges.
In a large bowl, whisk together sugar and flour. Beat in the eggs, followed by mango pure and lemon juice. Gently pour the filling over the hot crust when it is finished baking. Return pan to oven and bake for 20 minutes, or until the filling is firm.
Cool completely before slicing. Be sure to use a damp knife to ensure clean slices. Store bars in refrigerator.
